Celiac Disease 1, 2, 3

The multi-systemic disorder, Celiac Disease, is an autoimmune and/or inflammatory condition of the small intestine, induced by the ingestion of gluten which presents itself is a variety of diverse system wide symptoms.

1 in every 133 people in the US have Celiac Disease, a disease purely controlled by a change in diet.  The varied and individual symptoms of Celiac disease are managed with a complete, 100% avoidance of gluten; the protein found in wheat, oats, rye, and barley.  Celiac disease is twice as common as Crohn’s Disease, ulcerative colitis and cystic fibrosis combined.  Only 3% of those with Celiac Disease are currently diagnosed.

Those with Celiac Disease succeed at adherence to the diet at a much quicker rate when they have support.  The Celiac Site, is the entry into a network of support for those living a gluten free life, especially those with Celiac Disease.   It is cooperating with not competing against any other website or business.  As a central database and activist body, The Celiac Site is a great place to begin one’s quest for gluten free support.   The hope is that one’s journey through its pages would leave a Celiac, whether living the life for many years of newly diagnosed, feeling neither alone or without choices, but reassured by the many products and services available.

3 million Americans are suffering from Celiac Disease and do not know it.  Their medley of symptoms are often misdiagnosed or discounted as a mystery disease. They are absent from work and from class.  Lack of diagnosis takes a toll on our schools and economy.  The Celiac Site is bringing together businesses in order to deliver quality gluten free goods and services. This cooperative group is known as: MANY WAVES OF GRAINThe aim of this cooperation is a gluten free presence in the marketplace that will lead to awareness.  The more who are aware the more who will be tested.  The more who are tested and lead the gluten free life, the larger the activist body will become.   It is ONLY through this awareness and activism that necessary funds will be made available for research and possibly for a cure.   And if they can unlock Celiac Disease, researchers will have new keys to unlock other autoimmunity diseases such as diabetes, lupus, thyroid disease, and psoriasis.

Gluten Free Seasoning Salt

INGREDIENTS

3 tbs sea salt

1 tbs paprika

1 tbs oregano

1 tbs onion powder

¼ tsp ground sage

¼ tsp ground mustard

DIRECTIONS

Combine all the ingredients and store in a spice jar.

Gluten Free Chicken Wings

INGREDIENTS

1/2 cup orange juice

1 cup GF soy sauce

1/4 cup pineapple juice

3 cloves of garlic minced

1 teaspoon of minced ginger

1-2 lbs of chicken wings

DIRECTIONS

Combine first four five ingredients and mix well.

Add chicken and marinade overnight.

Place chicken in a single layer on a cookie sheet.

Bake for 1 hour at 350 degrees, turn once half way through.

Serve Hot.
