Gluten Free Date Squares

DATE SQUARES

FILLING

2 cups packed pitted dates

2 tbsp packed light brown sugar

1 cup water

1 tbsp lemon juice

1 tsp GF vanilla

TOPPING AND BASE

2 cups GF rolled oats

1 cup  GF all purpose flour

1 cup packed brown sugar

1 tsp GF baking soda

1/4 tsp cinnamon (optional)

1 tsp xanthan gum

1 tbs. almond meal

pinch salt

1 cup margarine, softened

DIRECTIONS

Filling: In heavy bottomed saucepan, combine dates and sugar and 1 cup water.

Bring to boil; reduce heat and simmer, stirring and mashing dates slightly, for 20 minutes or until thick and jam-like.

Stir in lemon juice and vanilla.

Set aside to cool.

Preheat oven to 350°F Lightly grease 8-inch or 9-inch square baking pan.
In large bowl combine oats, flour, sugar, soda, xanthan gum, almond meal, cinnamon and salt.

Add margarine, crumbling with fingertips until crumbly and well blended.

Pat half of mixture into bottom of prepared pan.

Spread date filling evenly over.

Sprinkle remaining oat mixture evenly over top.

Bake for about 30 minutes or until topping is golden brown.

Cool completely in pan on rack.

Cut into bars.

Gluten Free Dare Candies

The nice people at Dare have sent me the following:

“In choosing Dare candy, here are some guidelines:

1) All hard candy should be acceptable (eg. Clear Mints, Striped Mints, Scotch Mints, Pillow Mints, English Mints, Crystal Fruit and Chocolate Mints).

2) Most soft candy – ju jubes, gumdrops, jelly beans, gummies, Juiced Up Gummies, RealFruit Gummies and marshmallow products – should be acceptable.”

These are alot of my favourites!  I hope you will enjoy them as well.Please notice, though that they are not certified gluten free.

Gluten Free Stuffed Bell Peppers

INGREDIENTS

2 bell peppers

1 large onion, minced

1 clove garlic, minced

½ tsp cumin

½ tsp allspice

¼ lb ground beef or ground chicken

1cup diced tomatoes

DIRECTIONS

Preheat oven to 350°F.

Cook ground beef, onions, garlic and spices in a skillet over medium heat.

Cut around the stem on the peppers and core out all of the seeds and loose membranes.

Stuff the peppers with the beef mixture and top with tomatoes.

Bake in a covered casserole or glass pan covered with foil for 30 minutes.

Uncover and bake another 15 minutes.

Serve hot over a bed of rice.

This is one of those recipes you can play with. Try different spices, try adding rice to the stuffing. Add pine nuts, pecans, walnuts or unsalted cashews.
