Celiac Disease & the prevalence of celiac disease
Celiac disease is the most common genetic disease in Europe. In Italy about 1 in 250 people and in Ireland about 1 in 300 people have celiac disease1. A University of Maryland study of over 13,000 subjects demonstrated the prevalence at 1 in every 133 Americans have celiac disease. This study was released in February 2003.

Celiac disease is most common in whites, but has been diagnosed in Asians from India and Pakistan. It is rarely diagnosed in Japanese, Chinese or Africans. Because of the genetic component of the disease, it is found in 5 to 15 percent of siblings and offspring of celiacs. There is a 70 percent concordance among identical twins.

Coffee Mug Cakes

Have you ever thought to yourself  “I would really like something quick, easy and sweet” ? Well, here it is!

INGREDIENTS

4 tbs gluten free flour mix

4 tbs sugar

2 tbs baking cocoa

1 egg

3 tbs coconut milk

3 tbs olive oil

3 tbs chocolate chips

Chocolate syrup

DIRECTIONS

Oil the inside of a large mug.

Add dry ingredients.

Add egg and mix thoroughly.

Pour in the milk and oil and mix well.

Add chocolate chips.

Mix well.

Microwave 2 min on high. (Cake could rise over the top of the mug)

Allow cake to cool.

Drizzle with chocolate syrup.

Variation:

You can add1/4 tsp instant coffee to the milk.

You can add 2 tbs butterscotch chips or 2 tbs peanut butter chips for a delicious change in flavour.
