Impossible Greek Quiche

INGREDIENTS
5 eggs, beaten
1 cup chopped baby spinach
½ cup feta cheese
¼ cup sliced black olives
½ tsp white pepper
½ cup gluten free baking mix (see below)

DIRECTIONS
Preheat oven to 350ºF.
Lightly grease a large quiche pan.
In a large bowl, mix all of the ingredients well.
Pour mixture into quiche pan.
Bake until golden brown.
Allow to sit 5 minutes.

Gluten Free Baking Mix (Bisquick – sort-of)
INGREDIENTS
2 2/3 cups GF flour
6 Tbs Crisco
2 Tbs GF baking powder
2/3 cup tapioca flour
1 tsp sugar
2 tsp xanthan gum
½ tsp salt

DIRECTIONS
Cut Crisco into fine pieces.
Add remaining ingredients and mix well.
Use as you would Bisquick.
