INGREDIENTS
2 large onions, sliced
2 green peppers, sliced
1 tsp olive oil
2 lb ground turkey
1 tbs chili powder
½ tsp minced garlic
2 cups raw rice or corn macaroni noodles
1 can cream corn
1 can diced tomatoes
1 cup ketchup
2 cups grated cheddar cheese
DIRECTIONS
Preheat oven to 350ºF.
Lightly grease a large baking dish.
In a large skillet, brown the onions and peppers in oil.
Remove from pan and pat the oil off with a paper towel.
Use the same skillet to brown the turkey meat. Season with chili, garlic, salt and pepper.
Set aside.
Cook the macaroni according to the directions.
Drain.
Cover the bottom of the baking dish with part of the meat.
Cover the meat with macaroni.
Alternate layers of peppers, onions, corn, meat, tomatoes and ketchup.
Bake for 45 minutes.
Top with cheese and bake until cheese starts to brown.
Serves 16 to 20 people.
