INGREDIENTS
1 ½ lb ground beef (optional)
1 bag mixed beans, washed and soaked overnight in vegetable broth.
6 cups vegetable stock
3 cans diced tomatoes
2 cups green beans, chopped
2 cups diced carrots
2 cups whole kernel corn
2 cups peas or chopped broccoli or cauliflower
2 large onions, diced
2 tbs minced garlic
2 cups tomato juice
½ tsp ginger
¼ tsp hot paprika
1 tbs parsley
DIRECTIONS
Brown the ground beef, rinse and drain.
Put all ingredients into your largest crock pot/Slow cooker
Cook on high for 3 hours.
Reduce heat to low and continue to cook for 12 more hours.
This soup is better the next day. It also freezes well.
