Easy Lemon Chicken

INGREDIENTS

1 whole chicken

3 large lemons

1 clove of garlic

1 small bunch rosemary

salt and pepper to taste

DIRECTIONS

Peel garlic and cut one lemon into chunks.

Stuff them inside the bird.

Rub the chicken with salt and pepper.

Place it in your crockpot.

Cut remaining lemons into slices and arrange them over the chicken.

Place the fresh rosemary around the chicken.

Add 2 cups of water.

Cook on low all day.

Drizzle with Lemon Sauce when plated.

LEMON SAUCE:

Juice of two lemons

1 Tbs. Sugar

½ cup cold water

1 tsp. Cornstarch

Mix everything together is small sauce pan with a whisk.

Heat over medium whisking constantly until it begins to thicken.

Mix in ½ tsp butter.

Serve on lemon chicken.
