Gluten Free Corn Bread Lunch

INGREDIENTS

1 lb. ground beef

1 can non GMO creamed corn

½ onion, finely minced

3 tbs. jalapeno slices

Salt and pepper to taste

1 cup grated cheddar cheese or Daiya cheddar shreds

1 recipe of non GMO cornbread

DIRECTIONS

Preheat oven to 350°F.

Grease a 9 X 13 inch baking dish

Brown the beef with the onion, drain and season with salt and pepper.

Mix the corn bread recipe as usual.

Add the creamed corn and mix well.

Fold in beef mixture and Jalapenos.

Spread mixture into prepared pan and sprinkle with cheese.

Bake 20 to 25 minutes or until a toothpick inserted in the centre comes out clean.

Corn Bread Recipe

INGREDIENTS

¾ cup corn meal

1 ½ cups milk

1 cup GF all purpose flour mix

1/3 cup sugar

1 tbs baking powder

1 ½ tsp salt

1 large egg

¼ cup olive oil

DIRECTIONS

Mix together the corn meal and milk and allow to stand at lest 10 minutes.

Add remaining ingredients and mix, just until combined.

Bake in a greased muffin tins (or line them with papers) at 350ºF 15 to 20 minutes.

OR Use unbaked batter for Corn Bread Lunch.
