Gluten Free Pastry II

INGREDIENTS

1 cup + 2 tbs brown rice flour

2 tbs coconut palm sugar

2/3 cup ground almonds

1 egg

6 tbs butter, cut into pea-sized pieces

2 tsp lemon juice

DIRECTIONS

Mix flour, sugar, almonds and butter until crumbly.

Add eggs and lemon

Bring together with a spatula.

Wrap with cling wrap and chill for about 2 hours.

Roll out onto a floured board.

Line a pie plate and prick the bottom with a fork.
