Gluten Free Satay Chicken

INGREDIENTS

3 boneless, skinless, chicken breasts, cubed.

24 bamboo skewers

2 tsp tamarind paste

2 tbs warm water

3 garlic cloves

4 shallots, peeled

1 tsp coriander

¼ tsp cumin

½ tsp salt

1 ½ tbs olive oil

2 tbs oil

3 red chillies

3 cloves garlic, minced

½ cup dry roasted peanuts

½ tsp salt

3 tbs brown sugar

1 cup hot water

DIRECTIONS

Mix the tamarind paste, water, garlic, shallots, coriander, cumin and salt with oil, add chicken and set aside to marinade for at least 30 minutes.

Prepare the peanut sauce by these instructions:

Heat the oil in a sauce pan.

Add chillies and garlic and cook over medium heat until soft.

Pour into a blender with peanuts salt and sugar.

Blend briefly (Peanuts should be chunky)

Add the hot water and process until a thick sauce is formed.

Skewer the chicken cubes and grill on the BBQ until golden brown and cooked through.

Serve over rice with peanut sauce on the side.

    Yes I have done over 200 hours of research – and still going and all of my recipes have been tried by me.
    It is alot of work but very rewarding, in that I know I could be saving someone else some time and money (ruined food)
