2 cups mashed potatoes (not instant)
1 large egg
1 tbs gluten free all purpose flour mix
2 tbs cream or substitute
1 tbs minced onion
Salt and pepper to taste
Mix all ingredients together and shape into flat cakes (about 2 inches in diameter and about ¾” thick)
Fry in butter until golden brown on both sides.
Variation: Add ½ cup grated cheese.
