Gluten Free Porcupine Meatballs

INGREDIENTS:

1 lb. extra lean ground beef                                                              

 2 sticks of celery, chopped fine

1/2 cup gluten free bread crumbs                                                  

1/4 cup uncooked rice

1 egg, beaten                                                                                             

1 tsp. salt

 2 cups tomato juice                                                                               

 1 large onion, minced fine

DIRECTIONS

Mix all ingredients except tomato juice.

Shape into 8 balls and place into greased casserole dish.

Pour the juice over top of the balls and bake 1 1/2 hours at 350 degrees F.
