2 tbs olive oil
1 cup sweet diced onions
1 clove garlic, minced
2 tbs tomato paste
3 tbs gluten free all purpose flour
1 cup milk
2 cups gluten free chicken broth*
1 can diced tomatoes
1 tsp gluten free worcestershire sauce *
1 cup grated cheddar
pinch of fresh thyme
Heat oil in a large skillet over medium heat.
Add onion and garlic and saute until lightly softened (about 3 minutes)
Stir in tomato paste and flour.
Slowly whisk in the milk and broth.
Stir in tomatoes and add salt and pepper to taste;
Bring to a simmer and cook (stirring occasionally) for 10 minutes.
Pulverize in a blender and strain.
Bring back up to a simmer and stir in Worcestershire sauce and cheese
