Gluten Free Chocolate Chip Caramel Pecan Cookies

100_0050They aren’t exactly like the ones from Tim Hortons but they are oh so close!

INGREDIENTS

1 lb. margarine

3 cups brown sugar

3 eggs

4 or more cups GF all purpose flour

2 tsp. baking soda

½ tsp. salt

½ tsp. vanilla

2 cups milk chocolate chips

½ cup pecans

12 caramels chopped

DIRECTIONS

Beat the eggs, sugar and margarine with electric mixer on high.

Add flour, baking soda and salt a little at a time while mixing on slow. I keep adding until no dough sticks to my finger when I touch it. (don’t forget to wash your hands:))

Add vanilla and mix well (still on slow)

Add chocolate, nuts and caramels and mix gently.

Bake on ungreased cookie sheets at 350°F 5 to 8 minutes. Do not  let them brown. They should be a light golden colour.

ALL PURPOSE FLOUR

2 cups rice flour

2 cups tapioca flour

2 cups cornstarch

2 tsp. potato flour

make a large batch of this and keep it on hand.

DON’T FORGET TO CHECK ALL OF YOUR INGREDIENTS FOR HIDDEN GLUTEN

  1. I am eager to try these cookies. What type of caramels did you use? Soft or Hard? I cannot have dairy as well as gluten, so if there are any suggestions I’d love to hear them.
