Gluten Free Quiche

INGREDIENTS

pastry for one crust

1/4 cup of your favourite filling – bacon, onions, broccoli, etc. (or nothing at all if you just want a cheese quiche)

2 eggs plus 2 yolks

2/3 cup milk

1/4 cup cream

1/2 cup grated cheese (marble works great)

Salt and pepper to taste

DIRECTIONS

Roll out pastry  and line a 71/2 inch flan tin (I use a small shallow pie plate) and bake at 375 degrees F. until light brown.

Lightly cook your filling.   (cut vegetables into small pieces and steam until tender/crisp) Meats should be completely cooked and drained.

Place filling over bottom of pastry.

Beat the eggs and yolks.

Beat in milk and cream.

Add cheese and seasoning and mix well.

Pour over filling.

Bake at 350 degrees F. for 25 to 30 minutes. Quiche will be firm and golden.

NOTE:  USE YOUR IMAGINATION ON THIS. THE COMBINATIONS ARE ALMOST ENDLESS!

Here are a few of my favourites:

Chopped chicken and green pepper.

Onion and celery.

Sun dried tomatoes and chicken.
