1 ¼ cups rice fusilli or penne
1 small zucchini cut into discs
3 tbs GF tomato sauce
1 ½ tsp olive oil
½ tsp minced garlic
½ tsp parsley chopped fine
1/8 tsp paprika
1tbs parmesan cheese
1 tbs cream (half and half works well)
Salt and pepper to taste
Heat the oil in a pan over medium heat and add parsley and garlic. Add zucchini and cook 5 minutes stirring constantly.
Cover and cook over low heat for 8 minutes.
While you are waiting, add pasta to boiling water and set your timer (don’t forget to stir occasionally)
When Zucchini is tender, add the salt, paprika and tomato sauce and cook until heated through.
Pour cooked, drained pasta into the pan with the zucchini mixture and add cream, pepper and parmesan. Mix well
