Gluten Free Carrot Bread 2

carrot bread Follow the instructions for your bread maker.

DRY INGREDIENTS

3 cups GF flour mix (below)

2 ¼ tsp xanthan gum

3 tbs. Brown sugar

1 ½ tsp egg replacer

1 ½ tsp gelatin (unflavoured)

3 Tbs almond meal

4 ½ tbs powdered milk

¾ tsp salt

1 ½ cups grated carrot

2 ¼ tsp yeast

WET INGREDIENTS

3 eggs

4 ½ tbs butter

1 1/8 cup warm water

I always use the “dough only” setting on my machine and bake it in the conventional oven for about 45 minutes at 350°F

Gluten Free Flour Mix

1 cup rice flour

1 cup tapioca flour

1 cup cornstarch

3 tsp potato flour (not potato starch)
