Gluten Free Stuffed Bell Peppers

2 bell peppers

1 large onion, minced

1 clove garlic, minced

½ tsp cumin

½ tsp allspice

¼ lb ground beef or ground chicken

1cup diced tomatoes


Preheat oven to 350°F.

Cook ground beef, onions, garlic and spices in a skillet over medium heat.

Cut around the stem on the peppers and core out all of the seeds and loose membranes.

Stuff the peppers with the beef mixture and top with tomatoes.

Bake in a covered casserole or glass pan covered with foil for 30 minutes.

Uncover and bake another 15 minutes.

Serve hot over a bed of rice.

This is one of those recipes you can play with. Try different spices, try adding rice to the stuffing. Add pine nuts, pecans, walnuts or unsalted cashews.
