Gluten Free Date Squares



2 cups packed pitted dates

2 tbsp packed light brown sugar

1 cup water

1 tbsp lemon juice

1 tsp GF vanilla


2 cups GF rolled oats

1 cup  GF all purpose flour

1 cup packed brown sugar

1 tsp GF baking soda

1/4 tsp cinnamon (optional)

1 tsp xanthan gum

1 tbs. almond meal

pinch salt

1 cup margarine, softened


Filling: In heavy bottomed saucepan, combine dates and sugar and 1 cup water.

Bring to boil; reduce heat and simmer, stirring and mashing dates slightly, for 20 minutes or until thick and jam-like.

Stir in lemon juice and vanilla.

Set aside to cool.

Preheat oven to 350°F Lightly grease 8-inch or 9-inch square baking pan.
In large bowl combine oats, flour, sugar, soda, xanthan gum, almond meal, cinnamon and salt.

Add margarine, crumbling with fingertips until crumbly and well blended.

Pat half of mixture into bottom of prepared pan.

Spread date filling evenly over.

Sprinkle remaining oat mixture evenly over top.

Bake for about 30 minutes or until topping is golden brown.

Cool completely in pan on rack.

Cut into bars.
