Gluten Free Caraway “Rye” bread

 

INGREDIENTS

1 ¼  cups warm water

1 tbs. yeast

1 tsp honey

2 cups GF all-purpose flour

½ cup garbanzo bean flour

½ cup flax meal

¼ cup dry milk powder

1 ½ tsp guar gum

1 tsp. sea salt

1 ½ tbs. caraway seeds

1 tsp. dill

2 tsp. onion (finely minced)

2 eggs

4 tbs. olive oil

2 tbs. molasses

1 tsp. white vinegar

DIRECTIONS

Preheat oven to 400°F and lightly grease a large loaf pan.

Mix together warm water, yeast and honey and set aside. (It should be foamy)

In a large mixing bowl, combine dry ingredients and onion. Mix well. Then, with mixer on low, slowly pour in yeast mixture. Add eggs, oil, molasses and vinegar and increase mixer speed to high. (For about 2 minutes)

Turn batter into prepared loaf pan and score some lines into the top with a sharp knife. Cover with a clean tea towel and allow to rise for about 2 hours.

Bake for 30 minutes. Cover with foil and bake another 30 minutes.
