Gluten Free Chicken Souvlaki

INGREDIENTS

1/8 cup lemon juice

1 tbs olive oil

½ tsp salt

½ tsp fresh ground pepper

1 tsp oregano

1 clove minced garlic

2 large chicken breasts cut into bite sized cubes

Mix all the ingredients in the bottom of a small casserole dish.

Add the chicken and coat well.

Cover and refrigerate over night

COOKING

Soak 4 long bamboo skewers

Grill until golden brown on all sides

Serve over rice with Tsatsiki Sauce.

Gluten Free Tsatsiki Sauce

INGREDIENTS

½ medium cucumber

1 cup yogurt

1 tbs vinegar

1 tbs olive oil

1 clove minced garlic

2 tbs fresh mint chopped fine

salt to taste

DIRECTIONS

Cut cucumber lengthwise and remove seeds and skin.

Chop fine and wrap pulp in a paper towel.

In you chopper, add all of the other ingredients and chop until smooth.  Add cucumber and mix well.

Chill at least one hour prior to serving
