Gluten Free Slow Cooker Thai Chicken

Cut into bite sized pieces, and then measure the following:

1 cup snow peas

1 cup baby corn

1 cup baby carrots

1 cup green pepper

Throw them in the crock-pot.

Cut 4 large chicken breasts into bite-sized pieces and throw into a skillet with 1 tbs olive oil. Cook through.

Throw that in the pot.

Mince 1 large garlic clove and 1 large onion.

Throw them in the pot.

Add 2 cups orange juice and ¼ cup lemon juice

Mix together 1 cup cold chicken stock, 1 tsp. ginger, 1/3 cup of peanut butter and 2 tbs. corn starch.

Pour it in the pot.

Cook on low all day then serve over rice.
