Gluten Free Flax Bread – Delicious!!

DRY INGREDIENTS

1 cup sorghum flour

¼ cup brown rice flour

¼ cup millet flour

½ cup potato starch

¼ cup cornstarch

¼ cup ground flax

2 ½ tsp guar gum

1 tsp salt

1 tsp gelatine

¼ cup shelled unsalted sunflower seeds

WET INGREDIENTS

2 eggs

3 tbs olive oil

2 tbs honey

2 tsp vinegar

YEAST MIXTURE

1 cup warm water

2 tsp active dry yeast

1 tsp sugar

FLAX SEED MIXTURE

1 tbs ground flax

3 tbs water

DIRECTIONS

In a small bowl, combine 1 cup of water, sugar and yeast.

Stir and allow to foam up while you prepare the rest.

In another small bowl, combine 1 tbs water and 3 tbs flax

Mix together and allow to sit.

In a mixer, combine all of the dry ingredients.

Mix to distribute evenly.

In a medium bowl, combine all the wet ingredients.

Add yeast mixture and flax mixture.

Add wet ingredients to dry ingredients and mix on medium speed for 2 minutes.  Scrape the bowl and mix for another 4 minutes.

Pour into a large loaf pan and sprinkle with 2 tbs flax seeds (optional)

Let rise for about 40 minutes.

Place loaf in the oven, then turn it on to 350°F.

Bake 35 to 40 minutes.

Allow to cool for about 10 minutes before removing from pan.
