½ cup margarine
1 cup sugar
½ cup GF all-purpose flour
1 ¼ tsp xanthan gum
1 ½ tsp cinnamon
¼ tsp salt
1 cup finely chopped pecans
In a mixing bowl, cream margarine and sugar.
Add egg and beat until light and fluffy.
Combine flour, cinnamon, xanthan gum, and salt.
Add to creamed mixture and beat until smooth.
Stir in pecans.
Spread into a greased 8” square baking pan.
Bake at 350°F for 35 to 40 minutes or until a wooden pick comes out clean.
Cut into small bars while warm and roll in icing sugar.
