Aunt Jayne’s Chocolate Chunk Cookies

INGREDIENTS

1 lb margarine

3 ½ cups brown sugar

3 eggs

4 or more cups GF flour mix (see below)

½ tsp guar gum or xanthan gum

2 tsp baking soda

pinch of salt

2 ½ cups chocolate chunks (or morsels)

DIRECTIONS

In a large mixing bowl, beat margarine and brown sugar until smooth.

Add eggs and beat well.

Add remaining dry ingredients (except chocolate) a little at a time, mixing well each time until you can touch the dough with a clean dry finger and nothing sticks to your finger.

Add chocolate.

Bake at 350°F until slightly browned on the edges. These are best a little undercooked.

Gluten Free Flour Mix

1 cup rice flour

1 cup tapioca flour

1 cup cornstarch

3 tsp. Potato flour (not potato starch)

Mix together thoroughly and use.

This generally works the same as all-purpose wheat flour in recipes.
