Ginger Chicken With Snow Peas


2 boneless, skinless chicken breasts

2 tbs. GF Italian dressing

18 to 25 snow peas

½ cup water

¼ tsp salt

1 sm ginger root

1 lg green onion

1 lemon, cut in quarters


Cut chicken into strips and soak in the dressing.

Trim the snow peas.

In a large skillet, boil the water with salt and three slices of ginger, over high heat.

Add the chicken strips, turn burner down to medium, cover and simmer for 5 to 10 minutes.

Arrange the snow peas over the chicken, cover and cook for about 2 minutes.

Serve with lemon quarters and a garnish of green onion, on a bed of brown rice.
