Boiled Gluten Free Raisin Cake


2 cups raisins

2 cups water

½ cup olive oil

1 cup cold water

2 cups white sugar

4 cups GF all-purpose flour mix

1 ½ tsp cinnamon

1 tsp cloves

1 tsp nutmeg

1 tsp baking soda

½ tsp salt


Boil raisins in 2 cups of water for 15 minutes.

Remove from heat.

Add olive oil and cold water to the raisins.

Mix sugar, flour, spices, baking soda, and salt in a large bowl.

Add the raisin mixture, and stir till just mixed.

Pour into a greased and floured 9 x 13 inch baking pan, and bake for one hour in a preheated 350º F oven.

It is done if a toothpick, inserted into the center comes out clean.
