Mixed Bean Soup

INGREDIENTS

5 cups GF Chicken stock

¼ tsp ground black pepper

1 large carrot, chopped

½ stalk celery, chopped

¼ cup dried pinto beans

¼ cup dried navy beans

¼ cup dried kidney beans

1/8 cup dried lentils

1 can diced tomatoes (24oz)

½ cup uncooked brown rice

DIRECTIONS

Place everything, except tomatoes in a slow cooker.

Cook on Low heat for 7 hours.

Add tomatoes.

Cook an additional hour or more. (Beans should be soft)

Variation:

Cook spicy GF sausages and cut into medallions. (Cooked sausage should go in the pot at the beginning)
