Gluten Free Rhubarb Cake

INGREDIENTS

1/3 cup coconut oil

1 tsp. baking soda

2 eggs

1 cup sour milk

1 ½ cups bean flour

1/2  cup coconut flour

1 ½ cups diced rhubarb

DIRECTIONS

Preheat oven to 350ºF

Mix together ½ cup brown sugar and 1 tbs cinnamon

Sprinkle brown sugar mixture into a grease 9” X 13” pan.

Mix all of the ingredients together, beating until smooth.

Pour cake mixture into pan.

Bake  for 30 minutes. (A toothpick inserted into the center will come out clean)
