Gluten Free Rhubarb Coffee Cake


1 egg

½ cup coconut oil

½ tsp salt

1 tsp baking soda

1 cup coconut milk

2 cups diced rhubarb

1 cup sugar

1 tsp guar gum

2 cups GF all-purpose flour mix


Preheat oven to 350°F

Grease a 9 X 13 pan.

Combine first three ingredients in a medium mixing bowl.

Add the dry ingredients and mix well.

Add milk and rhubarb.

Mix only until combined.

Pour into prepared pan.

Mix together 1/3 cup brown sugar with 1 tsp cinnamon.

Sprinkle on top of batter.

Bake for 40 minutes.
