Trinidadian Summer Chicken Salad


3cups pre-cooked diced chicken breast

1 large red pepper cubed

½ red onion minced

1 ½ cups pineapple, diced

1 cucumber minced

3 tbs olive oil

¼ cup lime juice

1 cup parsley leaves

1 cup chives, chopped finely

¼ cup thyme leaves

2 tbs orange zest

¼ tsp salt

¼ tsp pepper


In a large bowl, toss together the first 5 ingredients.

In a blender, puree the remaining ingredients.

Pour puree over ingredients in the bowl and toss well.

Serve immediately.

Cover and refrigerate leftovers (If you have any)

Serves 4.
