2 tbs olive oil
1 ½ cups minced onion
3 cloves minced garlic
1 tsp cumin
1 cup finely chopped carrot
1 ¾ cups cooked chickpeas (drained)
1 ½ tbs Tahini
¼ cup finely chopped fresh parsley
1/3 cup garbanzo bean flour
½ tsp baking soda
½ tsp salt
2 tbs lemon juice
In a large skillet, over medium heat, sauté onions in 2 tbs oil, stirring constantly.
Add garlic, cumin and carrot.
Saute for 2 minutes more.
Transfer to blender and add chickpeas.
Process until smooth.
Add Tahini and parsley and process thirty seconds more.
In a separate bowl, combine flour, baking soda and salt.
Add mixture from blender and stir.
Flour your hands and divide the mixture into 4 equal parts and form each into a patty.
Dust the patties with flour.
Heat 1 tbs oil in a clean skillet over medium heat.
Fry the patties 2 minutes on each side.
Splash with lemon and serve with hummus.
