Coconut Ginger Bars


1/3 cup margarine

1 ¼ cups brown sugar

2 eggs

1 cup GF all purpose flour

1 tsp baking powder

½ tsp cinnamon

¼ tsp ginger

¼ tsp nutmeg

¼ cup certified GF rolled oats

½ cup finely crushed GF ginger snaps

¼ cup sesame seeds

¼ cup shredded unsweetened coconut

2 tbs apple juice


Lightly grease a 9” square pan.

Preheat oven to 375°F.

In a large mixer bowl, blend the first three ingredients.

Add remaining ingredients and beat for three minutes.

Spread into prepared pan.

Bake for about 20 minutes.

Cool and frost with butter icing, then cut into squares.
