Lemon and Herb Rice


¼ cup vegetable broth

1 clove garlic, minced

2 tbs onion, minced

¼ cup carrot, minced

1 ½ cups brown rice

3 cups vegetable broth

2 tbs basil, minced

2 tsp parsley, minced

1 tbs lemon juice

¼ tsp lemon rind


Heat the ¼ cup of broth in a saucepan over medium-high heat.

Add the garlic and onion.

Cook for 3 minutes.

Add the carrot.

Cook another 3 minutes.

Add the rice and cook another 2 minutes.

Add remaining broth.

Bring to a boil.

Reduce heat, cover and simmer until all the liquid is absorbed (40 to 45 minutes)

Add remaining ingredients, stir and serve.

Be sure to read your labels and make sure your ingredients are all gluten free!
