1 cup raisins
½ cup sugar
1 ½ tbs tapioca flour
1/8 tsp salt
2 eggs, separated
1 cup sour cream
1 tsp cinnamon
1 oat crust
Combine sugar, salt, flour and cinnamon.
Beat yolk thoroughly and add mixed dry ingredients.
Add raisins and sour cream.
Cook mixture, stirring constantly, over medium heat until thickened.
Pour into baked pie shell.
Beat the egg whites until you get soft peaks.
Add 4 tbs sugar and spread on top of pie.
Brown meringue in a 325ºF oven (about 12 minutes)
Oat Pastry is very easy.
Just combine 2 1/2 cups of GF rolled oats (ground fine)
with 1 cup margarine (or your preferred substitute)
and 1 tbs sugar.
Press it into the pie plate.
Bake at 325°F for 8 to 10 minutes. (slight change in colour)
