Doughnut Muffins

INGREDIENTS

¾ cup sugar

1 egg (Or equivalent of egg replacer)

1 ½ cups GF all purpose flour mix

½ tsp guar gum

2 tsp baking powder

¼ tsp salt

¼ tsp nutmeg

¼ cup olive oil

¾ cup coconut milk

2 tbs soy margarine

½ cup sugar  (add 1 ½ tsp cinnamon if desired)

DIRECTIONS

Preheat oven to 350°F.

Lightly grease mini muffin tin

In a large bowl, mix the (3/4 cup)sugar and egg (or egg replacer)

In a small bowl, mix together flour, guar gum, baking powder, salt and nutmeg.

Add to sugar/egg.

Mix well.

Add oil and milk.

Mix well.

Spoon batter into the mini muffin tins. (3/4 full)

Bake 8 to 10 minutes. (A toothpick inserted in the centre will come out clean)

While the muffins are baking, melt the margarine.

When the muffins are done, brush them with the melted margarine and then roll them in the remaining sugar (and cinnamon)
