20 new potatoes
½ cup plain yogurt
3 cloves garlic, minced
½ cup grated cheese
Salt and pepper to taste
Preheat oven to 350ºF
Cut the potatoes in half, lengthwise
Place potatoes, cut side up, on a cookie sheet and brush with olive oil.
Bake 20 to 25 minutes (potatoes will be soft)
Remove from the oven and cool enough to handle.
Using a small spoon or a melon baller, carefully scoop out the centers of the potato halves into a small bowl.
Mash or whip the potato with salt, pepper and garlic.
Stuff the skins and sprinkle with cheese.
Broil until cheese melts and potatoes are slightly crispy.
