Peanut Butter Muffins

INGREDIENTS

2 cups gluten free all purpose flour mix

½ tsp guar gum

⅓ cup brown sugar, packed

1 tbs baking powder

½ tsp salt

⅔ cup smooth peanut butter

1 ⅓ cup chopped peanuts

1 egg

¼ cup melted butter

DIRECTIONS

Preheat oven to 400ºF.

Line muffin tin with paper liners.

In a large bowl, stir together the flour, guar gum, sugar, baking powder and salt.

Set aside.

In a large mixer bowl, beat the peanut butter until smooth.

Add the milk, a little at a time and mix well.

Add egg and melted butter and mix well.

Add wet ingredients to dry ingredients and mix only until moistened. (Batter will be lumpy)

Spoon into muffin tins (3/4 full)

Bake about 15 minutes – a toothpick inserted into the center will come out clean.

Allow to cool at least 5 minutes before serving.
