When I was a little girl, my dad used to, quite often, on the weekends, make me breakfast.
Sometimes it was pink pancakes (he added a little red food colouring)
Sometimes he made a toad-in-a-hole.
It is easy and kids love them!
All you do is cut a hole in the center of a piece of gluten free bread (I like Udi’s)
Place it in a preheated frying pan (lightly greased)
Crack an egg into the hole and cook.
A small cookie cutter works great for cutting the holes and you can use the “holes” to make little sandwiches for lunch!
