1lb ground beef (ground turkey works as well)
¼ cup diced onion
1 ½ cups of corn pasta elbows
1 can tomato paste
1 can diced tomatoes
1 tbs taco seasoning (see below)
½ cup cheddar cheese
½ cup Monterey Jack cheese
1 cup crushed tortilla chips
½ cup sour cream
¼ cup green onions, chopped
¼ cup sliced black olives
Preheat oven to 350ºF.
Grease a 9” X 13” baking dish.
Cook the pasta according to package directions, drain and set aside.
In a large fry pan, cook the ground meat and onion over medium heat until browned.
Mix in the tomato paste, diced tomatoes and taco seasoning.
Stir in pasta.
Pour meat mixture into prepared baking dish.
Bake 20 to 25 minutes.
Top with crushed chips, cheese, green onions and olive.
Bake another 10 minutes.
Serve with sour cream.
GF Taco Seasoning
1 tbs chili powder
¼ tsp garlic powder (not garlic salt)
¼ tsp onion powder
¼ tsp crushed red pepper flakes
¼ tsp oregano
½ tsp paprika
1 ½ tsp ground cumin
½ tsp salt
1 tsp ground white pepper
In a small bowl, mix all of the spices together.
Store in an airtight container in a cool, dry place.
I find it best to grind the red pepper flakes in a coffee grinder.
