Cheesy Meatloaf

1 ½ lb extra lean ground beef (or turkey)
1 cup ground oats
2 eggs, beaten
1 tsp pepper
1 medium onion, minced finely
¼ cup Aunt Jayne’s GF BBQ sauce
2 cups shredded cheddar

Preheat oven to 350ºF
In a large bowl, mix well all ingredients except cheese.
Flatten mixture onto a piece of waxed paper so that it is about ¾ inch thick.
Sprinkle with shredded cheese.
Using the waxed paper by lifting one end, roll like a jelly roll tucking the ends.
Fit into a large loaf pan.
Top with a bit of Aunt Jayne’s GF BBQ sauce.
Bake for about 40 to 50 minutes. (Making sure that the centre temperature is at least 160º.)
