2 cups quinoa flour
2 tbs baking powder
¼ tsp baking soda
1/8 cup olive oil
½ cup raw cashews
2 cups warm water
1 tsp lemon juice
1 tsp pure maple syrup
In a large bowl, mix together flour, baking powder, and baking soda.
Grind the nuts in your blender.
Add water lemon and maple syrup to the ground nuts.
Blend until smooth.
Add liquids to dry ingredients and whisk until limps are gone.
(If the batter is too thick, you can add water, 1 tbs at a time)
Heat a lightly greased non-stick griddle. (A drop of water will dance when it is hot enough)
Pour small amounts of batter onto the heated griddle and cook until lightly browned.
Flip and cook the other side.
Serve with apple sauce or fruit preserves.
You can add one or two tbs of ground flax to the nuts in the blender for extra fibre.
Add ¼ cup blueberries just before cooking.
