Gluten Free (Alcohol Free) Christmas Cake

It took me three tries to get this right (Part of the reason it was not on here in time for Christmas)
Be sure to check all of your ingredients to be sure they are gluten free.
INGREDIENTS
¾ cup raisins
1/8 cup chopped dates
½ cup mixed candied fruit
½ cup mixed candied peel
½ cup candied cherries (mix of red and green)
¼ cup pecans

1/3 cup GF all purpose flour mix
¼ tsp baking powder
¼ tsp baking soda
¼ tsp all spice
½ tsp cinnamon
¼ tsp nutmeg
1/8 tsp cloves

¼ tsp almond extract
¼ cup sugar
2 egg yolks
1 tbs molasses

2 egg whites
1 tbs strong, cold brewed coffee
¼ cup butter

DIRECTIONS
Grease a loaf pan and line it with waxed paper.
Mix together the dry ingredients.
Combine fruit and nuts in a separate bowl.
Add about 1/3 of the dry ingredients to the fruit mixture and mix well.
In a mixer bowl, cream the butter.
Add the extract, sugar and yolks.
In a separate bowl, beat the egg whites.
Mix the egg white into the butter mixture.
Add the remaining dry ingredients and wet ingredients alternately.
Pour into prepared pan.
Allow to sit at least ½ hour.
Preheat oven to 275ºF
Bake 1 to 1 ½ hours.
Allow to completely cool and remove from pan.
Peel off the waxed paper.
Top with almond paste/Marzipan (if desired)
