Cinn-fully Good Apple Sauce Muffins

These gluten free muffins are great for diabetics 
INGREDIENTS
½ cup brown rice flour
½ cup white rice flour
¼ cup tapioca flour
¼ cup potato starch
¼ cup flax meal
¾ tsp baking powder
½ tsp salt
1 tsp guar gum
¾ cup unsweetened apple sauce
½ cup honey
½ cup coconut oil
1 egg
¼ cup walnuts, crushed.

DIRECTIONS
Preheat oven to 375ºF.
Line 12 muffin cups.
In a medium bowl, combine all the dry ingredients.
In a small bowl, mix the wet ingredients together.
Add wet to dry and mix, just until combined.
Stir in the nuts.
Spoon mixture into the prepared muffin cups. (3/4 full)
Bake 15 to 20 minutes or until golden brown.
Serve warm or reheat before serving.

    You have a good point. I don’t have issues with eggs, so I never considered it but they probably would be just as good without egg.
    You could increase the flax by a tbs. or increase the apple sauce (not sure off the top of my head by how much) and they should be just as moist and delishious.

  2. I’m thinking this may be good egg free, too. I’ve noticed that applesauce is a good substitute for eggs. I recently tried egg free muffins using an old ‘depression cake’ recipe. I was pleasantly surprised. It was a ‘spice cake’ recipe. I might try this one without the eggs and nuts. I love honey instead of sugar. It is so much healthier for you. Is this muffin recipe dense? Really moist? Thanks for sharing.
