Impossible Burrito Pie

1 cup GF baking mix (see below)
Salt & pepper to taste
1/3 cup water
1 cup spicy salsa
1 can refried beans
1 cup grated cheddar cheese
1 lb ground turkey

Preheat oven to 350ºF.
Grease a deep 9” pie plate.
In a large skillet, brown the turkey, drain and set aside.
In a medium bowl, mix the baking mix, water and beans together.
Place mixture into prepared pie plate.
Spoon the browned turkey over top.
Spread salsa on top.
Sprinkle with cheese.
Bake about 30 minutes or until golden.
Let stand 15 minutes.
Serve with more salsa, sour cream and gf nacho chips.

Gluten Free Baking Mix (Bisquick – sort-of)
2 2/3 cups GF flour
6 Tbs Crisco
2 Tbs GF baking powder
2/3 cup tapioca flour
1 tsp sugar
2 tsp xanthan gum
½ tsp salt

Cut Crisco into fine pieces.
Add remaining ingredients and mix well.
Use as you would Bisquick.
