2 cups of cold mashed potatoes
1 clove garlic, minced
½ tsp basil
½ tsp oregano
½ tsp parsley
½ tsp pepper
¼ tsp salt
½ tsp cayenne pepper
¼ cup grated cheddar
Approximately 2 cups gluten free bread crumbs
Preheat oven to 430ºF
Line a cookie sheet (needs to have sides on it) with aluminum foil.
Coat the foil with oil.
In a medium bowl, mix together the potato, cheese and garlic.
In a large flat bowl (pasta bowl works perfectly) mix bread crumbs and spices.
Using a potato scoop, scoop out some of the potato mixture and drop it into the crumbs.
Roll the potato ball around in the crumbs to coat.
Place balls on prepared pan.
Bake until golden brown and crispy.
