Good for any day
1 head romaine lettuce, chopped
1 small package baby spinach leaves, chopped
1 cup red cabbage, shredded
½ cup carrots, grated
1 large onion, chopped
1 green pepper, diced
1 red pepper, diced
½ cup cheddar cheese, diced
1 large cooked, boneless, skinless chicken breast, diced
¼ cup slivered almonds
1 recipe raspberry vinaigrette
Wash, chop and spin the veggies.
Chop the cheese and chicken.
Toss the veggies together in a bowl.
Top with chicken, cheese and almonds.
Sprinkle with vinaigrette.
If you are feeling adventurous, you could throw on a few cranberries too!
NOTE: If you are planning to take this for a school/work lunch, keep the chicken, cheese, almonds and dressing separated until you are ready to eat.
