2 tsp olive oil
2 large zucchinis
1 tbs minced garlic
¼ tsp sea salt
2 tbs fresh chopped parsley
2 tsp fresh lemon juice
Cut the zucchini lengthwise and cut into half moons. (About ¼” thick)
In a large skillet, heat the oil over medium heat.
Add the zucchini and sauté for 3 to 4 minutes.
Add garlic and cook another 2 to 3 minutes.
Remove from heat.
Stir in parsley, salt and lemon juice.
Serve warm as a side dish.
