Aunt Jayne’s Potato Patties


1½ cups left over mashed potatoes

¼ cup grated cheddar cheese (Daiya non dairy)

3 tbs gluten free all purpose flour

1 egg, lightly beaten

1 tbs chopped chives

2 tbs minced onion

1 tsp minced garlic

½ tsp fresh ground black pepper

2 tbs butter or substitute


In a large mixing bowl, with a wooden spoon, blend together everything but the butter.

Heat the butter in a large skillet over medium heat.

Drop mixture by spoonfuls into the skillet.

Cook approx. 3 minutes.

Flip over and flatten slightly with your lifter.

Cook until golden on both sides.

Serve hot.
