Breakfast Hash Browns With Veggies

4 large potatoes
1 tbs olive oil
¼ cup diced onion
¼ cup diced green pepper
¼ cup diced red pepper
1 tsp GF seasoning salt

Wash and dice the potatoes.
Boil in 2 quarts of fresh, salted water. (1/2 tsp salt)
Heat olive oil in a large non-stick skillet.
Add potatoes and onions.
Cook over medium heat, stirring constantly for about 2 minutes.
Sprinkle with seasoning salt.
Add remaining ingredients and cook another 4 or 5 minutes.
Potatoes will be golden.
